Apple-Filled Peanut Butter Cups
Yield: 18 peanut butter cups
Ingredients
Spiced Apples- 1 Honeycrisp apple, diced
- ¼ cup light brown sugar, packed
- 1 Tbsp maple syrup
- ½ tsp ground cinnamon
Peanut Butter Cups
- 9 oz. semisweet chocolate
- ¾ cup peanut butter
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ½ tsp kosher salt
Directions
Spiced Apples- Cook apples over medium-low heat with brown sugar, maple syrup, and cinnamon until softened.
- Set aside and allow to cool.
Assembly
- Combine peanut butter, powdered sugar, vanilla extract, and salt. Set aside.
- Melt half of the chocolate and spread evenly on the bottom of 18 mini muffin or candy cups. Allow to harden.
- Pipe peanut butter mixture into cups and top with a small spoonful of spiced apples.
- Melt remaining chocolate and spread evenly on top of cups, then refrigerate until solid. Enjoy!
